Truly a food of the gods, pineapples are one of the most popular tropical fruits worldwide. The flesh is consistently sweet and juicy, firm enough to neatly cube yet soft enough to pulse or puree for chutney, jams, juices and desserts. Look for specimens with skin that is more yellow than green and with a delicately fruity, sweet scent discernible at the bottom. You can also test for ripeness by trying to pluck a leaf off the crown. If it slips out easily your pineapple is ready to eat. Pineapples don't continue to ripen once they are picked so make sure you select a fragrant one to start.
