This cone-shaped, hollow fungi has a honeycombed patterned flesh that beautifully absorbs sauces. You can smell the freshness in a wild morel it's deeply earthy, recalling wet forest leaves. Swish well under cold runny water to remove sand and dirt. Stuff whole, or slice and sauté with butter and shallots, then sprinkle with chopped parsley or thyme.
