HOW to STORE and HANDLE MUSHROOMS
As a rule, clean the mushrooms as you need them, ideally without water. Paring knives, mushroom brushes, and tea towels can all be used to remove debris.
Mushrooms will usually last about a week in the refrigerator but are best consumed within the first three days.
If the mushrooms you receive are a little damp, allow them to air dry in the refrigerator.
Chanterelles are pretty mushrooms with their frilly apricot colored caps and trumpet shape. They grow wild throughout Europe and the Pacific Northwest and are extremely versatile. Chanterelles have a fruity-nutty flavor and meaty texture that complements roasted chicken, poached fish, pizza, veal and pasta. Add thin, raw slices to salads; saute and place spoonfuls on grilled polenta squares.
